Local winegrowers call the warm Föhn wind that ripens the grapes the 'traubenkocher' — the 'grape cooker' — and the region has repeatedly won international Pinot Noir championships despite its tiny size.

This is an elegant, light-bodied Pinot Noir (locally called Blauburgunder) with notes of red berries, spice and earthy minerality from the region's limestone and schist soils. It's traditionally paired with Bündnerfleisch, the canton's air-dried alpine beef.

Why it's made this way: Grown in the four villages of Fläsch, Maienfeld, Jenins and Malans, the Bündner Herrschaft is Graubünden's premier wine appellation, with Pinot Noir covering roughly three-quarters of its vineyard land.
