Khanom Chin Nam Ya (Rice Noodles with Fish Curry)

Despite 'chin' sounding like 'Chinese', khanom chin noodles came from the Mon people, and the name probably comes from Mon.
Coils of soft fermented rice noodles topped with nam ya, a curry of pounded fish, coconut milk, lemongrass and krachai, eaten with fresh and pickled vegetables. A cheap, fast plate from noodle stalls and markets.
Why it's made this way: Nam ya fish curry originates from Central Thailand, and the creamy coconut version is the classic central style.
