Phetchaburi is better known for palm-sugar sweets, yet this savoury noodle plate is one of the town's signature dishes.

Fresh fermented rice noodles topped with small fried fish cakes, usually made from king mackerel with curry paste and crisp basil, then glazed with a sweet-and-sour sauce or served with ajat, a cucumber and onion relish in vinegar. Sold at noodle shops and market stalls in Phetchaburi town.

Why it's made this way: Phetchaburi's creative-city programme lists it as a dish created by Phetchaburians, and it is among the local foods highlighted since the town became a UNESCO City of Gastronomy in 2021.
