The rice, not the chicken, is the real technical showpiece — it's cooked in the bird's own rendered fat and broth, which is exactly what the dish's name literally translates to: 'oily rice chicken.'

Poached whole chicken is sliced over rice cooked in chicken fat, garlic and stock, then served with a clear broth, cucumber slices and a soy-chili-ginger dipping sauce. Bangkok's Pratunam district is dotted with competing carts and stalls, some Michelin-recognized, all built around this one plate.

Why it's made this way: The dish descends from Hainanese immigrants who adapted their homeland's Wenchang chicken rice to Thai ingredients and tastes, becoming one of the clearest examples of Thai-Chinese immigrant cuisine going fully mainstream.
