Look Chin Ping (Grilled Meatballs on Skewers)

Vendors often boil the balls first, then finish them on the grill just long enough to char the outside — a two-step method that keeps the inside springy instead of dry.

Bouncy pork, beef or fish balls are threaded onto bamboo skewers and grilled over charcoal until lightly charred, then served with a sweet-spicy dipping sauce of chili, sugar and vinegar. They're sold from portable charcoal carts on nearly every Bangkok and central Thai street corner.

Why it's made this way: The springy texture comes from Chinese-style meatball-making techniques brought by Teochew immigrants, making look chin one of the clearest everyday examples of Thai-Chinese street food fused into daily Thai life.
