Chanthaburi, Thailand's biggest durian-producing province, holds a fruit festival every year during the harvest where growers compete over the best durian.

Ripe Mon Thong and Chanee durian are sold whole or already cracked open at roadside stalls that line the highways through Rayong and Chanthaburi, custard-soft and pungent, often eaten plain or alongside sticky rice.

Why it's made this way: Rayong and Chanthaburi together form one of Thailand's most important durian-growing regions, and the orchard harvest each year around April through June has shaped local roadside commerce for decades.
