A plate of lo ba can mix ears, intestines, tongue and belly, all fried crisp and chopped up together with fried tofu.

Pieces of marinated pork offal, deep-fried and chopped to order, served with fried tofu, cucumber and a sweet-spicy dipping sauce. Sold from stalls and small shops in Phuket Town as a snack.

Why it's made this way: Lo ba comes from the Hokkien food traditions of Phuket's Chinese community and is listed among the island's local street foods by Phuket food guides.
