Mee Hokkien (Phuket Hokkien Noodles)

The dish is named after Hokkien (Fujian) in southern China, where many of the Chinese families who settled in Phuket came from.

Thick yellow egg noodles wok-fried with egg, pork, squid, prawns and greens in a little stock, so they come out moist and savoury. Sold at old shophouse counters and noodle stalls across Phuket Town.

Why it's made this way: Phuket's large Hokkien Chinese community brought the dish, and it is one of the island's best-known local foods, easy to find almost everywhere on the island.
