O-Aew (Phuket Shaved Ice Jelly)

The jelly is set from the seeds of a creeping fig mixed with nam wa banana juice. The same fig jelly is known as aiyu in Taiwan.

Clear o-aew jelly served over shaved ice with syrup, usually topped with red kidney beans and grass jelly. Regulars order by colour: white for the jelly, red for beans and black for grass jelly.

Why it's made this way: Hokkien settlers brought it to Phuket during the tin-mining boom of the mid-19th to early 20th centuries, and it remains a Phuket Old Town specialty.
