Unlike other oyster omelettes in Asia, Phuket's version is bulked out with cubes of taro, which go crispy at the edges.

A batter of egg and flour fried with taro cubes and tiny oysters, topped with pork crackling and spring onions and served with bean sprouts and chilli sauce. Cooked on flat griddles at street stalls and hawker counters.

Why it's made this way: It is a Hokkien-derived dish that food guides, including the Michelin Guide, describe as found only in Phuket.
