Unlike the sweet, condensed-milk roti sold in tourist areas, this savory version is meant purely as a curry-scooping tool — sugar rarely goes anywhere near it.

Plain roti dough is griddled fresh until flaky and golden, then torn by hand and dipped into a small bowl of massaman-style or yellow curry. Southern Thai-Muslim vendors sell it as an early-morning breakfast, often alongside sweet tea.

Why it's made this way: The dish reflects the deep Malay-Muslim influence on southern Thai cooking, brought by traders and communities along the peninsula, and remains a defining breakfast in provinces like Trang, Krabi and Satun.
