Its shape traces back across the Mediterranean to Spain — a rare North African street food with a direct Iberian ancestor.

Mashed potato is mixed with tuna or ground meat, hard-boiled egg and herbs, shaped into small croquettes, then coated and deep-fried until golden. They're a common addition to festive spreads on Djerba.

Why it's made this way: The croquette technique was brought to Djerba by Jewish families with roots in Spain, an echo of the Iberian empanada tradition adapted with local Tunisian fillings.
