Demand for babbouche reportedly rises whenever meat prices climb, since it remains one of the cheapest protein sources sold on Tunisian streets.

Small land snails are simmered in a fragrant broth heavy with cumin and herbs, then sold by the bowl from street carts and market stalls. Diners winkle the meat out with a pin and drink the leftover spiced broth.

Why it's made this way: Snails remain part of the food culture in only a handful of Tunisian regions — Hammamet, the Sahel coast and Kairouan among them — even as the tradition has faded elsewhere in the country.
