Snail sellers mostly work in winter and spring, when snails are gathered after rain, and the hot broth is sold by the cup as a warming cold-weather remedy.

Small land snails are simmered in a fragrant broth heavy with cumin and herbs, then sold by the bowl from street carts and market stalls. Diners winkle the meat out with a pin and drink the leftover spiced broth.

Why it's made this way: Babbouche is a cold-weather street snack in a number of Tunisian towns, including Kairouan and the Sahel coast, sold by the bowl from carts.
