Makroudh

The oldest known written recipe for a maqrud-style pastry dates back to a 13th-century Arabic cookbook.

Diamond-shaped semolina dough is stuffed with a spiced date paste, deep-fried in olive oil, then dipped in warm honey syrup. Sold in nearly every shop lining Kairouan's medina, it's the city's best-known culinary export.

Why it's made this way: Kairouan is widely credited as the birthplace of makroudh, and the pastry's formal name — Maqroud al-Qayrawan — comes directly from the city's Arabic name, Al-Qayrawan.
