Makroudh — street food from Kairouan, Tunisia

Kairouan's makroudh is usually fried, but many Tunisian households also bake a lighter oven version filled with the same date paste.

Diamond-shaped semolina dough is stuffed with a spiced date paste, deep-fried, then dipped in warm honey syrup. Sold in nearly every shop lining Kairouan's medina, it's the city's best-known culinary export.

Why it's made this way: Kairouan is widely credited as the birthplace of makroudh, and its version is sold across Tunisia as 'makroudh Kairouan'.
