Bsissa is a popular Ramadan food, eaten at the pre-dawn meal because its calories help carry people through the day of fasting.
Bsissa is a roasted flour blend, and the Sfax version balances roasted wheat with chickpeas, coriander, fennel, anise and other spices, ground fine and mixed with olive oil and sugar or dates into a thick paste or drink.
Why it's made this way: One of Tunisia's oldest foods, bsissa's high calorie density made it a portable staple for centuries, and each region has its own mix; in the centre and around Sfax, chickpeas or fava beans play a bigger part.
