Despite sharing a name with the South Asian flatbread, Tunisian chapati is an entirely unrelated, leavened, griddle-fried sandwich bread.

A thick, calzone-like round of soft flatbread is griddle-cooked and stuffed with cheese, harissa, hard-boiled egg, tuna and crisp french fries, folded over like a pocket sandwich. This heartier variety is associated with Mahdia, in the Sahel just south of Sousse.

Why it's made this way: Chapati in general is a Tunisian street-food staple, but the Mahdia version is prized in the Sahel for piling in enough fillings to make it a full meal rather than a snack.
