The same sandwich became so popular among Tunisian-Jewish emigrants that it's now a common street food in Israel too, under the same name.
A small, slightly sweet fried yeast bun is split open and packed with tuna, harissa, hard-boiled egg, olives, capers and mashed potato. Sold from dedicated hole-in-the-wall counters across Sousse, it's meant to be eaten standing up in a couple of bites.
Why it's made this way: Oral history places its origin in 19th-century Tunisia, and Sousse today is one of the cities most cited for its dense clusters of fricassé counters near the medina.
