Despite a name that is Spanish for 'caramel', there is nothing sweet about it: just grilled beef and melted cheese.

Tucson's take on the quesadilla: flour tortillas layered with melted cheese and chopped mesquite-grilled carne asada, griddled almost like a flat panini and sold at Sonoran taco stands and trucks.

Why it's made this way: It belongs to the Sonoran carne asada tradition of southern Arizona, where wheat flour tortillas are central to the regional cooking.
