Desert summer cooler · Fruit on shaved ice

Raspado

🍧
Photo coming soon

The name comes from the Spanish 'raspar', to scrape, after the scraped ice at its base.

Finely shaved ice piled with chunks of fresh fruit and juice, often finished with ice cream, sweetened condensed milk, or chile, lime and chamoy, sold in cups from raspado stands all over Tucson and southern Arizona.

Why it's made this way: It is a Sonoran treat, and Sonoran-style raspados have spread throughout southern Arizona, where they are a fixture of summer.
