Locals call these puffy rounds of fry bread 'popovers', and the best-known ones are fried at folding tables in the plaza of an 18th-century Spanish mission.

Hand-stretched dough fried to order until it puffs, then topped with honey, cinnamon sugar, or beans and cheese, sold from Tohono O'odham family stands in front of Mission San Xavier del Bac, busiest on weekends.

Why it's made this way: The mission sits on the Tohono O'odham Nation reservation about 10 miles south of Tucson, and tribal vendors have long sold fry bread to visitors there; Tucson readers' polls name it the city's best fry bread.
