Unlike almost every other burrito style, the California Burrito skips rice and beans entirely, relying on French fries as its starch — a combination said to have started at San Diego taco shops in the 1980s.

Grilled carne asada, French fries, melted cheese, sour cream, and guacamole are rolled together into a flour tortilla with no rice or beans at all. Late-night taco shops across San Diego, and increasingly the rest of California, serve it as the go-to after-hours order.

Why it's made this way: San Diego's Mexican-American taco shop scene invented the fries-instead-of-rice format, giving the city its own distinct burrito style separate from the Mission District's version further north.
