San Diego's fish taco is a direct import from Baja California's fishing towns, and it stayed a local secret for decades until a small taco chain built entirely around it went nationwide in the 1980s.

A piece of battered, deep-fried white fish is tucked into a small corn tortilla and topped with shredded cabbage, crema, and a squeeze of lime. Beachside stands throughout San Diego serve it as the city's defining taco, distinct from the grilled meat tacos found further north.

Why it's made this way: The recipe crossed the border with Baja California fishermen and beach cooks, and San Diego's coastal taco stands made it their own before it spread statewide.
