Ralph Rubio brought the idea home from San Felipe in Baja California and opened Rubio's in San Diego in 1983, the chain that made fish tacos familiar across the American West.

A piece of battered, deep-fried white fish is tucked into a small corn tortilla and topped with shredded cabbage, crema, and a squeeze of lime. Beachside stands throughout San Diego serve it as the city's defining taco.

Why it's made this way: The recipe crossed the border with Baja California fishermen and beach cooks, and San Diego's coastal taco stands made it their own before it spread statewide.
