Chopped conch meat mixed with peppers, onions and batter, deep-fried into crisp balls and served by the basket with a tangy dipping sauce at Keys shacks and stands.
Why it's made this way: Bahamians who settled in the Florida Keys from the early 1800s brought the fritter with them, and conch is so central to the islands that Key West locals call themselves 'Conchs'.
