The fries go inside the bun: a pile of crispy shoestring potatoes sits right on top of the patty.
A thin, heavily seasoned beef (often beef and pork or chorizo) patty on a soft Cuban roll with onions, sauce and a heap of shoestring potatoes, sold at frita stands and counters.
Why it's made this way: Fritas were sold from street carts in Havana from the 1930s; Cuban exiles revived them in Miami from the 1960s, especially around Little Havana.
