Although it is a Puerto Rican sandwich, it was invented in Chicago: Juan Figueroa got the idea from a newspaper story about a plantain sandwich in Aguada, Puerto Rico. The name means 'little yokel'.

Two flattened, twice-fried green plantains stand in for the bread, holding thin steak, lettuce, tomato, cheese and garlicky mayonnaise; ordered at Puerto Rican counters and eaten by hand.

Why it's made this way: Juan 'Peter' Figueroa put it on the menu at Borinquen Restaurant in Humboldt Park in 1996, building on the twice-fried plantains known in Puerto Rico as tostones.
