The dish is said to have started as revenge — as the story goes, a scorned girlfriend loaded a boyfriend's fried chicken with extra cayenne, and he liked it enough to start selling it.

Chicken is brined, double-fried until deeply crisp, then brushed with a cayenne-loaded hot oil paste and served straight on a slice of white bread with pickle chips. Nashville's dedicated hot-chicken windows sell it in graded heat levels, from mild up to a level that comes with a waiver-style warning.

Why it's made this way: What began as one Nashville family's secretly guarded recipe at a single walk-up shack spread into a citywide specialty and a whole category of restaurants now built around graded spice levels.
