Buffalo wings were invented by accident in 1964 at the Anchor Bar in Buffalo, when owner Teressa Bellissimo tossed leftover chicken wings — usually thrown away or used for stock — in hot sauce to feed her son's hungry late-night friends.

Whole chicken wings are deep-fried plain until crackling-crisp, then tossed in a butter-and-cayenne hot sauce and served with celery sticks and blue cheese dressing on the side. Buffalo's bars and takeout windows still serve them exactly this way, unbreaded.

Why it's made this way: The dish was invented at a specific Buffalo tavern, and the city's insistence on unbreaded, hot-sauce-tossed wings remains the standard against which every other city's wings are measured.
