The Anchor Bar in Buffalo says it invented the wings in 1964, though family members tell different versions of how it happened and other Buffalo cooks have claimed the idea too.

Whole chicken wings are deep-fried plain until crackling-crisp, then tossed in a butter-and-cayenne hot sauce and served with celery sticks and blue cheese dressing on the side. Buffalo's bars and takeout windows still serve them exactly this way, unbreaded.

Why it's made this way: The dish is credited to a Buffalo tavern, and the city's insistence on unbreaded, hot-sauce-tossed wings remains the standard against which every other city's wings are measured.
