The dish's signature creamy white sauce is such a closely guarded recipe among Manhattan cart vendors that copycat versions get debated online with the same intensity as pizza and bagel rankings.

Griddled seasoned chicken and gyro meat are piled over yellow rice with shredded lettuce and tomato, then finished with hot sauce and a tangy white sauce and boxed to go. Halal carts parked on Manhattan corners, most famously near 53rd and 6th, serve it late into the night.

Why it's made this way: Immigrant halal vendors, many from Egypt and the wider Muslim world, built this platter for New York's taxi drivers and night-shift workers starting in the 1990s, and it's since become one of the city's defining modern street foods.
