New York politicians used to be photographed eating knishes to show solidarity with Jewish working-class voters.
A baked or fried pastry pocket filled with mashed potato (or kasha), sold from hot dog carts, delis and knish bakeries.
Why it's made this way: Ashkenazi Jewish immigrants brought it to New York around 1900, and the first knish bakery in America opened there in 1910.
