New Yorkers famously fold their slice in half lengthwise before eating it on the move — a habit born from a thin, floppy crust that would otherwise sag and spill its toppings.

A wide, thin-crust triangle of cheese pizza is reheated on demand and handed over on a paper plate, folded in half for eating standing up or walking down the sidewalk. Corner pizzerias across the five boroughs sell slices this way around the clock.

Why it's made this way: Italian immigrant bakers in early-1900s New York adapted coal-oven Neapolitan pizza into a wider, thinner, faster-cooking pie built specifically to be sold by the slice on the street.
