Pork shoulder slow-smoked over hickory and oak coals, chopped (never pulled) and piled on a bun with red slaw, sold at counter-service barbecue joints.
Why it's made this way: Lexington is the center of western North Carolina's shoulder-only style and has held a barbecue festival since 1984.
