North Carolina's General Assembly designated official livermush festivals in 2012: Shelby's in the fall and Marion's in the spring.
Slices of livermush (pork liver and cornmeal loaf) fried crisp and served on white bread or a biscuit with mustard, mayonnaise or even grape jelly.
Why it's made this way: Livermush is a staple of the western Piedmont and foothills, especially Cleveland County, where family firms have made it since the 1930s.
