Cincinnati chili began as a hot dog topping: the Kiradjieff brothers served it on 'coneys' in 1922 at a stand next to a burlesque theater called the Empress.
A small hot dog topped with cinnamon-spiced Cincinnati chili, mustard, chopped onion and a heap of finely shredded cheddar, ordered at counters in the city's chili parlors.
Why it's made this way: Cincinnati has over 250 chili parlors, and the cheese coney is one of their two most popular orders.
