The main producer makes over a million pounds a year, and about 99 percent of it is eaten in Greater Cincinnati.
Slices of goetta, a sausage of ground pork or beef with steel-cut oats, fried crisp and served in sandwiches at diners, festivals and ballpark stands.
Why it's made this way: German immigrants from around Oldenburg and Westphalia brought it to Cincinnati in the 19th century to stretch meat further.
