Austin has argued for years with San Antonio over which city actually invented the breakfast taco, and Austin even declared an official Breakfast Taco Day.
A warm flour tortilla is folded around scrambled eggs with a choice of bacon, chorizo, potatoes, or refried beans and a hit of salsa. Taquerias and gas-station stands across central Texas sell them wrapped in foil for the morning commute.
Why it's made this way: The dish grew out of the Tejano ranching communities of central and south Texas, where flour tortillas, not corn, are the everyday bread.
