The savory sausage-and-cheese version Texans call a kolache is technically a different pastry, a klobasnek — but the name never stuck, and everyone still just calls it a kolache.
Soft yeasted dough is wrapped around a link of sausage, sometimes with cheese and jalapeño, or filled with sweet fruit or cream cheese, then baked until golden. Small-town bakeries along Central Texas' unofficial 'Kolache Trail' sell them warm from the case every morning.
Why it's made this way: Czech immigrants who settled Central Texas towns like West and Caldwell in the 1800s brought the pastry, and it became a grab-and-go breakfast unlike anywhere else in the state.
