The Pike Place Market bakery that made piroshky a Seattle market habit, Piroshky Piroshky, was opened in 1992 by Soviet immigrants Vladimir and Zina Kotelnikov with about $1,200 in the bank.

Hand-sized baked buns stuffed with fillings like beef and cheese, sold hot from the bakery window at Pike Place Market and eaten walking through the market or down by the waterfront.

Why it's made this way: Piroshky came to Seattle with Russian and Soviet immigrants, and since 1992 the Piroshky Piroshky window at Pike Place Market has made them one of the market's standard walk-around snacks; Anthony Bourdain ate there on No Reservations in 2007.
