Seattle Teriyaki

By 2010 more than 83 Seattle restaurants had 'teriyaki' in their name.
Grilled chicken or beef glazed in sweet soy teriyaki sauce, served over steamed rice in a takeout box from small counter shops.
Why it's made this way: The first standalone teriyaki shop, Toshi's Teriyaki, opened in Lower Queen Anne in 1976, and teriyaki became Seattle's signature cheap eat.
