The name is usually traced to the French word bouillon, broth, as pronounced by the region's Walloon-speaking Belgian settlers.
Chicken, beef, and a mix of vegetables are simmered for hours in huge outdoor kettles until they break down into a thick, hearty stew, then ladled into cups for church and firehouse fundraisers. It's most associated with Green Bay's Belgian-American community.
Why it's made this way: Belgian immigrants who settled in northeastern Wisconsin's Door County peninsula brought the communal kettle-cooking tradition that gives the region its own stew.
