The Wisconsin State Fair's Cream Puff Pavilion sells close to half a million cream puffs over its eleven-day run, staffed by a dedicated volunteer bakers' association just to keep the line moving.

A choux pastry shell is piled with fresh whipped cream and dusted with powdered sugar, served two-handed since the puff is nearly the size of a bun. The Wisconsin State Fair's Cream Puff Pavilion has baked and sold them fresh since 1924.

Why it's made this way: Wisconsin's dairy abundance makes real whipped cream cheap enough to pack into a pastry this generously, and the state fair tradition turned it into a must-eat rather than a routine bakery item.
