Roasted Groundnuts

Nearly two-thirds of farming households across Eastern Province grow groundnuts, making the crop nearly as central to the region's fields as maize.
Freshly dug groundnuts are roasted in their shells over coals or dry-fried in a pan, then sold by the cupful at markets and roadside stands around Chipata. They're eaten as a plain snack or crushed into sauces for other relishes.
Why it's made this way: Eastern Province is one of Zambia's major groundnut-growing regions, so roasted nuts sold by the cup are an everyday sight at Chipata's markets, grown by most smallholder farming households in the area.
