Mishikaki Skewers

The name mishikaki comes from Swahili for 'skewer', reflecting how the snack travelled south along regional trade and travel routes.

Cubes of marinated beef or goat are threaded onto skewers and grilled over open charcoal braziers, a quick, smoky snack sold by roadside vendors and at Livingstone's markets. It's usually eaten plain, straight off the stick, or with a side of chips.

Why it's made this way: Mishikaki spread across East and Southern Africa as a portable, affordable way to sell grilled meat street-side, and it's become one of the easiest bites for visitors passing through Livingstone's tourist strip to grab between Victoria Falls activities.
