Zambezi Bream

Restaurants around Livingstone specifically flag 'Zambezi Bream, fresh from the river' as a menu highlight distinct from farmed fish.

Bream pulled straight from the Zambezi River is scaled, gutted and grilled whole over charcoal, often rubbed with little more than salt and chilli. Vendors near the Livingstone market and riverside eateries serve it with a wedge of nshima and a mound of stewed greens.

Why it's made this way: Livingstone sits on the Zambezi just above Victoria Falls, and river bream has been a staple here for as long as people have fished these waters; it remains the fish most visitors are steered toward at local eateries.
