Cow trotters carry a folk reputation in Zimbabwe as a natural aphrodisiac, which keeps stalls selling it busy with mostly male customers.

Mazondo is a rich stew of cow (or pig) trotters, slow-simmered for hours with onion, tomato and garlic until the gelatinous meat falls off the bone. Vendors at Mbare Musika and other Harare markets ladle it straight from open pots, usually with sadza on the side to mop up the gravy.

Why it's made this way: The dish makes use of every part of the animal in a country where beef is prized, and stalls specializing in mazondo have become fixtures of Harare's informal food economy.
