Mutakura

Photo coming soon

A single serving can combine four different crops — maize, peanuts, bambara nuts and cowpeas — making mutakura one of the most protein-dense street snacks in the country.

Mutakura mixes dried maize kernels, peanuts, bambara nuts (nyimo) and cowpeas, soaked overnight and then boiled together for hours until soft. Vendors sell it by the cupful as a filling snack at markets and bus ranks around Harare.

Why it's made this way: The combination of grain and two kinds of nut makes mutakura a low-cost, high-protein meal — a practical staple that has fed generations of Zimbabweans between main meals.
