The name is usually explained as 'little sparrows', a Swabian diminutive of Spatz, because the irregular hand-scraped noodles were thought to look like small birds.

Fresh egg noodle dough is scraped or pressed into boiling water, then layered with grated mountain cheese and caramelized onions, melted together in the pan. Festival food stands across the region serve it in a paper bowl as a filling, meat-free option.

Why it's made this way: The hand-scraping technique is a defining Swabian home-cooking skill, and its cheese-and-onion layering turns a simple egg noodle into a full meal.
